Strawberry Popsicle Recipe

This time of year, we've got lots of wonderful fresh produce that needs to be used, and seem to always be in need of frosty treats.  These strawberry treats are the answer to both -  plus, they are easy to make and healthy!





Strawberry Popsicles

Ingredients
  • 1/2 cup water
  • 1/2 cup sugar
  • 12 ounces strawberries, hulled
  • 1 tablespoon lemon juice 

Directions

  1. Bring 1/2 cup of water and the sugar to a boil and let cool.
  2. Puree the strawberries, cooled syrup, lemon juice, and 1/2 cup water in a food processor.




  3. Fill popsicle molds with the strawberry mixture. (If you don't have popsicle molds, use paper cups, place on a tray, cover securely with plastic wrap, and pierce a popsicle stick through the plastic into each cup). 
  4. Freeze until solid.








Quick, easy, tasty and healthy - you can't ask for more in a treat!  (Well, you could ask for chocolate I suppose... but we'll get to that another day...)




This recipe can be used with any fruit you have on hand.  You'll want to add (or remove) sugar to taste, and perhaps switch the lemon juice with lime or even orange!
