Tailgate Pepper Fajitas

We have season tickets to see the San Diego State Aztec football games.  We've had them for over ten years and have a tradition of tailgating before the game.  We like to have something a little different than the standard hamburgers and hot dogs.  The Mr came up with the idea of having fajitas with grilled peppers in place of tortillas.  It turns out, it is delicious!  Here's how we do it:



Tailgate Pepper Fajitas

Ingredients:
  • 1 chicken breast, sliced into bite-sized pieces
  • 1/2 pound steak, cut into bite sized pieces (you can by the "stir fry" or "fajita" pre-cut packages in most stores)
  • 1 large onion, thinly sliced
  • Bell peppers and various hot peppers to taste, sliced
  • 4 large Anaheim or Pasilla peppers (these will be your "tortillas")
  • 1 package of fajita spice mix
  • 4 tablespoons of vegetable oil
  • sour cream
  • shredded cheese cheese


Directions:

Place the chicken on a sheet of aluminum foil.  Sprinkle with 1/4 of the fajita spice mix, add one tablespoon oil and seal the package.  Repeat with steak.  Repeat again with the onion.  Finally repeat with the bell peppers and various hot peppers.

Place all of these packets on the grill, vegetables to the outside over fewer coals or less direct heat.

Grill for about ten minutes.  Turn the packets over and then put the Anaheims (or Pasillas) on top of the packets.  Cover the grill and cook for another ten minutes.

Remove the foil packets but leave the Anaheim peppers on the grill.  Open each packet carefully (it will be hot!) and empty onto a serving plate.




Remove the peppers from the grill.  Using a knife, slice open each pepper (carefully - they will be hot!) and remove the seeds and core with a spoon.

(Also - don't you love the football serving dish and bowls?)



Serve by filling your "tortilla" pepper with your choice of fillings.  Add sour cream and cheese to your taste.


This is an easy one to customize too.  Do you like corn on your fajita?  Add a corn packet... or just add the corn to your peppers or onions.  Like pico de gallo?  Add that!

Great way to tailgate - this is one of our favorites, and we always get folks wandering by from other tailgates wishing they had our dinner!
