Chocolate Frozen Greek Yogurt


We had some plain Greek yogurt left over the other day.  I thought it would make a nice dessert {perhaps one that was a little lighter, one that maybe wasn't half butter, half sugar and half cream...} and I thought frozen yogurt would be a crowd-pleaser. This certainly was! Even my father-in-law {who most definitely does not like Greek yogurt} liked it pretty well.



Chocolate Frozen Greek Yogurt


Ingredients:

  • 3/4 cup white sugar
  • 2 teaspoons cornstarch
  • 6 ounces (1/2 can) fat-free evaporated milk
  • 6 ounces heavy cream
  • 1/2 cup semisweet chocolate chips
  • 1 cup plain nonfat yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup almond slivers (optional)



Directions:

Stir together the cornstarch and sugar, and place in a saucepan. Stir in the evaporated milk, cream, and chocolate chips. Cook over medium heat until chocolate is melted and the mixture is thickened. Stir constantly to prevent burning.





Remove the mixture from the heat, and stir in the plain yogurt and vanilla.






Refrigerate until chilled.


Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions.  {Note - I made a double batch - if you do that, don't make my mistake and overfill your ice cream maker... unless you like cleaning up a chocolatey mess!}





Stir in the almonds if using and spoon into a container.  Freeze until firm, two to four hours.


Tastes wonderful with a cookie!


I really liked this recipe.  I think it maintained some of the flavor of the Greek yogurt, and had the creamy consistency of good quality ice cream.  And it was chock full of chocolate!  Who could ask for more?
