Vanilla Ice Cream. 5 Ingredients. Simplicity Itself.


I love ice cream.  And I love to try making exotic flavors - just lately Rum Ice Cream, Peach Lambic Sorbet, Lemon Champagne Sorbet - even Strawberry Basil Sorbet.

With so many possibilities, I sometimes forget how amazing plain old vanilla ice cream can be.  This basic recipe for Vanilla Ice Cream is one of my favorites.  It is a Philadelphia style ice cream, which  traditionally,  are milk and cream-based mixtures and which contain no eggs. This means the ice cream is less rich, but it has a more intense flavor. The style is also known for using pure, natural ingredients and some Philadelphia Style ice cream mixtures are also cooked before they are frozen. Of course, all of this is in contrast to “French Style” ice cream which uses eggs and is sometimes also referred to as a custard.

This recipe is simplicity itself - 5 ingredients, no cooking, pure cream and vanilla flavor.


Vanilla Ice Cream

Ingredients:

  • 2 cups half-and-half cream (fat-free works well)
  • 1/4 cup heavy cream
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Directions:

Combine half-and-half, cream, sugar, vanilla and salt in a bowl.  Stir until the sugar is mostly incorporated.  Add to the freezer container of your ice cream maker and freeze according to manufacturer's instructions.



This took me about 30 minutes, including the initial freezing.  While I did put it in the freezer for additional firmness, this would have been wonderful straight out of the ice cream maker.

Vanilla ice cream + fresh strawberries = D.I.V.I.N.E.
